so a lot of cleric domains grant proficiency with martial weapons, and many a cleric will go for weilding an shield in one hand since it means an free spell casting focus in one hand and a bit more tankiness, but with this in mind there are so many one handed martial weapons that all deal 1d8 damage when weilded in one hand, there is the rapier, the war pick, the battleaxe, the warhammer, longswords and so much more and i am curious which one are your favourites, which ones you like the most, which ones you think is the most memey option and so on.

I use a longsword more often than not because for a long time clerics weren't allowed to use bladed weapons. Warhammers are pretty iconic as well though and do tend to look pretty sweet with a heavy armor wearing mauler.
My character carried a battle axe, but honestly only ever used it for opportunity attacks, and after picking up warcaster, not even for that. So can I answer sacred flame, as my one handed weapon.
would it not be more apt to say that your spellcasting focus, in the case of most clerics an shield with the emblem of your god, is your one handed weapon

Rapier, because dex > str if I am using a 1 hander.

Any time an unfathomably powerful entity sweeps in and offers godlike rewards in return for just a few teensy favors, it’s a scam. Unless it’s me. I’d never lie to you, reader dearest.
My Tempest Cleric is using a whip. She started off with 1 level in Sorcerer and started off as a Human with the Spell Sniper Feat, giving 10ft range to Booming Blade (and the Thorn Whip spell). She's going to stay Tempest Cleric the rest of the way. But she started off with 1 level in Sorcerer to get Booming Blade, Shocking Grasp, Ray of Frost, Prestidigitation, Shield, Absorb Elements, and the Draconic Ancestry AC of 13+Dex. And the proficiency in Constitution Saves.
Because of the Draconic Ancestry AC bonus, Dex is her highest stat and strength is her dump stat even though she's a Tempest Cleric and can use Heavy Armor. With a shield, she's got a pretty decent 18 AC.
A whip is the only reach weapon that you can use with just one hand (unless you're mounted and using a lance), and it's a finesse weapon so its fine for someone like her with Dex as her top stat and Strength as her dump stat. Because it's one handed, she can use it and still use a shield. It's only a D4 of damage, but Booming Blade provides a nice damage increase, and it's quite convenient to have a 10ft range. She's only level 4 right now, but when she gets Spirit Guardians in a couple of levels, she'll be able to do a Booming Blade melee attack and move to reposition her Spirit Guardians aura without having to take an opportunity attack. It's going to be fun next level when I get War Caster, and I can cast Booming Blade with a 10ft range as an opportunity attack, too. The 10ft range on Booming Blade just opens up so many possibilities for tactics in combat.
It's a very unorthodox way to play a Tempest Cleric, but so far it has been a lot of fun.
In D&D 1st edition Clerigs couldn't use neither bladed weapons, nore two hand weapons, nore spiked weapons................ ( so many things have changed since those times ). Then I was focused in Bludgeoning hammers, or Clubs, or maces. And I discovered in an external website it exist a maul, with 2 or 3 spiked balls, chained to the edge of a ¿shaft?.
Why not ???? Then I started thinking if I could roll the damage dices focusing in how many spiked balls it have that MAUL. If it possible this, what a nice damage ratio... huh ????
metamagic booming blade is probably really interesting
I am only taking one level in Sorcerer, so I don't get Metamagic. But taking the Spell Sniper feat gives Booming Blade a range of 10ft every single time without needing to use sorcery points.
yeah i know you cannot use metamagic just sayin, free 10ft reach if you dont have it, for 1 sorcery point you can use twinned spell witch should basically be extra attack, so on so fourth

As of right now I’m trying to choose my domain and it will only give me the option of life domain and I’d like to have more option because I want either war or tempest. Could you please help me if you have any idea what up with it.

You only get the basic rules by default. You have to purchase the content that's found in other books. You can either buy the book that the material is located in, or you can purchase the domains you want ala carte.

Depends on the build and if I multiclass. I played a rogue/Trickery Cleric that used a rapier.
