So, basically, I will play a summoner. From what I understand summon beast is ok early on but probably not later, unless the DM let's it get extra hp for the class ability from Shepherd.
Conjure spells are good when you get to pick summons how good though? Too good? I'm ok down scaling spells as well just to make it fair.
Either way, my biggest concern is what are some good spells to use while your summons are up? Since summons are concentration spells, lots of spells go down the drain, some advice on good spells to use would be nice (that work while summons are up preferably).
Also I will take Fey touched feat, for roleplay reasons and I like misty step. Normally I think hex and hunters mark are great spells but since I'll have issues with concentration already I don't see them having any use really... Also I don't plan to use any attacks myself anyways since I'll be playing an old man. What are some other good spells to pick? Preferably non concentration ones.
Healing Word and Goodberry are two of your best spells with the unicorn spirit out. While you have multiple good cantrip options, thorn whip has particular synergy with the hawk spirit, since you can grant yourself advantage. Can you fly? If you can fly, no question thorn whip should be one of your starting cantrips, and even if you can't, it's just a good choice when supporting your army.

Why not pick up a bow or some such and make mundane ranged attacks? Or does your character just stay out of combat besides unleashing your summons on your enemies?
spells: find traps, produce flames, lesser restoration, daylight, dispel magic, dark vision... I think that druids have more non-combat spells then combat spells.

Hes an old man and more or less yeha, he's going to summon stuff and try to avoid combat. I picked dissonant Whispers for my fey touched spell, it fits well with the theme and could be of benefit in combat.
Pure offense/defense: Produce flame for consistent damage, absorb elements to keep you alive when things go very wrong, ice knife or thunder wave for when you need a little more damage than cantrips can offer (I usually go ice knife for better range), tidal wave or erupting earth for AOE (I usually go tidal wave b/c it can target flying creatures), blight for the rare BBEG fights when you're willing to sacrifice a precious 4th level slot on mere single target damage. Note that if you're creating a bunch of good berries every night you may want to focus on cantrips and your summoned creatures for your offense to cut down spell slot usage.
Support/battlefield control: Thorn whip, plant growth (this is almost too good if you're fighting outside), lesser restoration, dispel magic, speak with plants, ice storm, freedom of movement.
Healing: Healing word and/or cure wounds, revivify. Healing word is the obvious safe pick but cure wounds is worthy of consideration and might even be worth taking along side healing word now that druids can cast touch spells at a distance through familiars. Cure wounds is also helpful for triggering the unicorn totem on rounds when you already used your bonus action to summon the totem or drop out of wild shape.
By far the best spell to get with fey touched on a summoner druid is Dissonant Whispers. Think about it... you're going to surround the enemy with conjured animals... then you can use a non-concentration 1st level spell to make them run away and trigger opportunity attacks from all those animals. That's a lot of damage potential on top of the 3d6 psychic damage from the spell itself.
You could take bless with fey touched to give bonus 1d4 to you summons attack and saving throws. Or your allies
entangle and faerie Fire would also be good spells to pick up for control and giving advantage to your party and summons.
