Just throwing this thought out, instead of a favoured enemy being a particular race or type, might it not make sense to have a more generic, possibly terrain based, set. "Armies of the Great Desert" or "Icewind Dale denizens" or "Followers of Set."
My reasoning is that Desert dwellers, whether human, orc, or halfling, would likely use the same travel and survival techniques. Armies often "go by the book" for everything, including movement and camping, or for the more savage bands such as orc armies, the human mercenaries and goblin skirmishers, would likely follow routines that are more or less enshrined in 'how it is done.' A commander has to understand logistics to plan campaigns, and the ranger has learned the tactics of his enemies...
Dragons, Giants, Oozes : they make sense to have the knowledge remain based upon the race. (dragons might include kobolds, giants might include dire wolves, Oozes might....hang on, has anybody ever taken that option?)
A unique combat mechanic of some sort on par with smite or sneak attack (but different)
Special abilities that don't require a Ranger to be in a specific environment to use. Bear Grylls can survive in multiple environments so why can't the Ranger?
A suite of special abilities related to tracking. No one should be able to escape a high level Ranger for long.
I know for me these are the homebrew things I want to eventually test out:
1: Combine Favored Enemy + Foe Slayer = (Damage or Attack roll boost) + Advantage on Wisdom AND Intelligence checks + Advantage against Favored Enemies on your first turn of combat. I would still use 3 selections; choose 2 humanoids.
2: Ability to adapt to changing terrains because of primal magic stuff.
3: Primal Talent, choose two of the skills following skills: animal handling, athletics, nature, perception, stealth, survival. Gain proficiency. If you already have proficiency, your proficiency bonus is doubled.
