Even assuming one harvest per body. its still a powerful addon that is basically free damage if used at the right time. any poisonous creature killed where the body stays gives a one use benefit.
but harvesting from magical creatures and living ones are very dm dependent on their effectiveness. if a dm allows a lot of harvesting I expect a good mix of immune/resistant creatures.
I like to buy special weapons and put them in sheaths or quivers only to be drawn when I am sure the enemy is affected by it. (I like using skills and investigation to enhance combat to check resistance this type of play is basically 1/3 of curse of strahd).
Nothic are specifically referenced as part of several magic items. One example is a focus in out of the abyss found in blingdenstone. I believe another is in curse of strahd.
basilisk are known for in game harvesting the MM Page references:
Some alchemists are said to know how to process the basilisk’s gullet and the fluids contained within. Properly handled, the gullet produces an oil that can return petrified creatures to flesh and life. Unfortunately for such a victim, any parts lost in stone form remain absent if the creature revives. Revivification using the oil is impossible if a vital part of the petrified creature, such as its head, is detached.

Otherwise wouldn't there be like unlimited poison harvesting protentional? Killing the poison black market and economy?
I think you mentioned not using this, but would conjure animals not work once they disappear the poison from them would be gone or inert as well?
