Wouldn't a Strength based Tortle Ranger be *fairly* doable?
Yup. You get a Wis bonus, so you can start with a 16 in that; you get a Str bonus, so you can start with a 16 in that; and AC 17 is the best any ranger can get without magic items, Medium Armor Master, or heavy armor proficiency. Pretty good, actually, and (if you use a shield) one of the few ways to get AC 19 at 1st level. Starting equipment might pose a problem, though.

My son created a Goliath Bar/Ranger 1/10 for Against the Giants from TftYP. With a 21 STR (Belt of Hill Giant STR) and DEX on 18, he is dual-wielding Long Swords for an avg. of around 40 Dmg/RD (3 attacks) Between him and the heavily armored Dwarf Life Cleric in the party, the Giants are having a rough time of it.

Dual Wielder feat lets him dual-wield longswords, but dual-wielding and hunter's mark combine to do some really nasty things to his action economy unless he's fighting a small number of highly durable enemies. Oh, and you can't cast or concentrate on spells while raging.

Oh for sure, the whole thing is bonus actions everywhere, bonus actions to rage, bonus actions to hunters mark, bonus actions to attack, etc. You are of course correct re: the rage and hunter's mark being an either / or. So I suppose I could see it if he never actually got to use his bonus action attacks and thus it's only 3 (base, extra attack, horde breaker or whatever subclass ability) as a result; but then I see little purpose in actually dual wielding. If he is getting bonus action attacks (presumably from turn 2 onwards regardless of which path he's pursuing in a given fight), the question remains as to which subclass he went with.

I wish my ranger had the 13 dex required to multiclass, because a level of barbarian would be nice. Horizon walkers don't need hunters mark, they just use a bonus action to get 2d8 extra damage on one attack.
I have a firbolg build that has fighter as a beginning class, then switches to ranger so I can have heavy armor and a Con save proficiency. Her Dex is pretty decent too, so I don't feel like she's missing out. As for subclasses...maybe Champion/Gloom Stalker or Horizon Walker?
I have been dabbling with a Strong Centaur Ranger; gloom stalker (think ancient haunted forests with links to the shadowfell). A Lance (1d12) seems pretty thematic and a charge(racial feature) with double dice will be glorious! I will also point out that the centaur's equine build feature would lend it self to heavy armour since they can carry so much more weight.
Still, I would select feats like Charger, Great weapon master, Sentinel Mobile and Athlete i.e. mobility and damage over protection.

He's more of what I like to call a "war ranger" because he wears half-plate, two-weapon fighting with longsword and warhammer (raised a blacksmith, so a hammer feels right). He's surprisingly a front line beast in most of our combat encounters. Sometimes I'll do area control like spike growth, but he's still more or less an in-your-face melee attacker. Lately I have been trying out a ranged combat, his DEX is 14 so he's fairly accurate.
He's my first real D&D character I ever created and I've been playing him for about 3-4 years now. Love it.
I haven't played it yet, but I do have a strength-based gloomstalker build that I keep on hand in the event that want to run a one-shot based on the movie Predator. It has an 18 strength and 14 dexterity, and I replaced the shoulder-mounted plasma cannon with a wand of magic missiles.

I'm developing a Strength based half-orc Horizon walker who wields a Glaive (No PM / GWM / Sentinel) uses Javelins for ranged (darts for Lightning Arrow). Idea is he travels the wilderness defending from extra planar attacks (Favoured Enemy is Abberations).
16(14+2) / 14 / 14(13+1) / 12 / 12 / 8
Are what I'm thinking for Stats, first two ASI are +2 strength & Magic initiate Wizard (Prestidigation / minor illusion / find familiar).
Anyone have any alternate suggestions, I want to be a half-orc Horizon Walker and wield a Glaive are the main requirements.
I am not sure where you want to go with this, character but because he has strength AND reach/ranged, I would augment with "grappler" "tavern brawler" and possibly "crossbow expert". The idea being he is a champion warden of the (insert location/faction here)... until enemies get in his face (5ft)... then he orcs out!!!! This will make a dip into barbarian very appealing as during a rage strength(grapple athletics) checks have advantage.
I made a half-orc Gloom Stalker wielding a greatsword reflavored as a falchion. I rolled okay on attributes, so 19 Str, 14 Dex, 14 Con and 16 Wis.
Not a great AC at 16 (Potential 18 with shield), but decent range versatility with Archery fighting style on a heavy crossbow, and brilliant and reliable first-round nova with Gloomstalker bonuses and Hunter's mark, which fits well with my idea of Gloomstalker as an ambush specialist. Likewise, not having to use his Bonus Action for attacks means being able to more efficiently move Hunter's Mark between targets in melee. I play him as an aging Caravan Specialist who indulged in some orcish raiding in his youth.
Not a hugely optimized character, but very thematic as a big and fast stealthy killer, and a more militant spin than your average ranger. You feel like a rockstar during the first round of combat and for stealth segments. My DM also allows me to use STR for intimidate checks involving overt physical threats, which is great fun. And giving anybody advantage on social rolls by standing behind them and crossing your arms staring daggers is awesome as well.
It is not advisable because of the armor limitation. So I would say always DEX.
Not necessarily-- even the Ranger 101 guide posted on this very site says that a STR ranger is viable, just wear medium armor and wield a shield. You won't have trouble with AC, as long as you don't have a negative DEX modifier.

i like linguistics and, well, d&d, obviously. this bio hadn't been updated for 3 years so i figured i'd do that.
I have a Str-Ranger Horizon walker. With haste, Defense style and a shield, he can attack twice and then use his Haste action to Disengage. With his 22AC, he's surprisingly durable. And fast.
Just made a Mountain Dwarf Ranger. I rolled for stats and based on what I got decided to go str based like the Warhammer Dwarf Ranger. I will build him into a gloomstalker that wields 2 handaxes and a greataxe.
If I was going to play a melee (20+ years of ranger/fighter in 2-4e....bored with melee in general) I'd strongly consider a PAM ranger with a halberd.

i have just made a half elf ranger outlander with:
Str 18 +4, Dex 15 +2, Con12 +1, int 10 +0, Wis 13 +1, Cha 13+1
its overpowered, i know bt its how the dice came out... My partner will not let me swap anything, the evil women...
So now i have to live with it, lucky my dex is still at a good level
