When you reach a 3rd level Rouge you gain an feature called Roguish Archetype. Here you will decide what “path or specialty” you would like to take your character. You have the choice of Thief, Assassin or Arcane Trickster. (These are the 3 choices you have in the Players Handbook. It’s notable to mention there are several other choices you have in other books such as Tasha’s Cauldron of Everything or Xanathar’s Guide to Everything.) Hope this helps.
Yea I’m not fully versed on character creation on dndbeyond. (I’m old school paper and pencil) so you have either checked something that limits your choice of Archetype or (and this is what I’m betting on) you have not bought the players hand book from dndb. I’d bet $100 bucks that if you did buy (upload) it from dndb and then went back into your Rouge you would have the other two options. Same goes to Tasha’s and Zanathars etc…. I say this because I have had a similar experience with a Paladin I created on dndb. I took the Variant human choice so I could acquire a feat at 1st level. When it came to choosing my feat the only option I had was the grappler. (Which is the worst feat by far) so there’s that…I will say that IMO there is nothing better than rolling for your character out of the books. It just brings so much more flavor and bonding to your character. You have to read a lot but there is nothing wrong with that plus you really get the feel of how a character is created and a lot more.
Alright I went to my rogue and leveled him up but the only archetype I had was thief
On D&D Beyond you only get player options from the basic rules. If you want to play an arcane trickster you will meed to either purchase the Players Handbook on D&D Beyond or just the individual subclass (for much less).

Do what I do. Simply create what you need in the Homebrew section of dndbeyond. It's a bit complicated at first, but once you get the process down, you can add feats, races, sub-classes...basically anything you would pay for you can simply recreate. Just make sure in your character settings you allow homebrew stuff.

You have to be the level to choose it...did you add enough levels to choose a subclass?
