Well, at higher levels your firebolt deal up to 4d10 damage. And it can crit for 8d10 damage. And you could cast a spell and disengage, dash, or do some other thing.
When the DM smiles, it is already to late.
I think that 2 sorcery points at high levels for 4d10/8d10 damage is a nice thing to have.

essentially if an effect uses the word cast it can be metamagic'd assuming the spell is elgible for that particular metamagic effect
