I've noticed the up arrow "like" button in the forums lets me click it more than once. The count of likes shown keeps going up and up (try it!). But if I click on the number to show who's liked it, it toggles me on and off the list. If the number of likes I've left is odd, I'll be on the list. If it's even, I won't.
So, as you may know, the way it's supposed to work is after you click the arrow it replaces with an "x" to remove your like. So I think what's going on is for some reason your specific UI is not rendering the x and adding to your perceived count, where in reality or to the perspective of other readers you're just like/unliking it.
This happened to me once, eventually it sort of self resolved, not sure if it was a grower refresh or sign in/sign out, but the main thing is you're not "cooking" anyone's likes but simply liking and retracting in a cycle.

Interestingly, it correctly shows 1 like on MidnightPlat's answer on my phone.
