Vedalken isn't a monster subtype or tag yet. Some of the other Ravnica races may not be available on those lists either but I haven't checked. Please update when you can. Thanks!
Thats because there are no specifically vedalken monsters. There are several humanoid race that have been in the game since the beginning that are not searchable for the same reason (for example: halfling, half-orc, dragonborn, and tieflings). Most humanoid npcs will use a stat block that could apply to any race. A DM can add racial features to this stat block if needed.
I think you're missing the point; any monster with the NPC tag can be almost any race. So a commoner can be a halfling or a dragonborn or a vedalkan. They don't need that tag as well because they'd have to have all the possible tags.

This is reasonable. But I still wanna input it for specific NPCs ¯\_(ツ)_/¯
I guess for sharing these creations, leaving them generic makes sense.

I was about to suggest "You can totally create a custom npc in homebrew and give it vedalken traits."
It was then that I realized you could not give it the vedalken subrace tag or indeed any humanoid race tag that has never been a named npc before.
It is a minor inconvenience, but a legitimate one.
