Basically, to use the desktop style where everything is on one page, you have to keep the tablet in a landscape orientation, if you put it into a portrait orientation, it switches to the "phone" mode. In my opinion, the best way to handle tablets would to use the desktop panels in a portrait orientation. Their screens are big and high enough resolution that the phone interface is silly, but it makes more sense to use it in a vertical position, like a piece of paper.
Basically, what would be ideal is the desktop UI arranged to scroll vertically.
