That's because D&D Beyond only supports the official rules of D&D, which currently don't extend to levels past 20. If WotC does decide to add that feature, D&D Beyond will update to support it.
And all of that homebrew fits with modifiers that already exist within the core game system. If something already does it, you can homebrew it yourself. For example, we couldn't add more attunement slots until the artificer came out and now we can homebrew items that give up to 6 slots.

The problem isn't that the rule say you can't. The problem is the rules don't say what happens if you do. The character sheets calculate a ton of things automatically and there are no instructions on how to calculate characters over level 20.
The 2 most important stats are proficiency bonus and (multiclass) spell slots. Once WotC produces rules on how those change after level 20, DDB will also allow those characters.
