I have a similar problem. I created a Paladin3/Sorcerer8. Following the Multiclass spellcasting table I'm a 9th level Spellcaster, therefore i have 1 lvl 5 spell slot. The problem is i cant prepare lvl 5 spells. What am i missing? Sorry the bad english.
Neither a level 8th sorcerer nor a level 3 paladin have access to 5th level spell slots. to determine the spells that can be known/prepared you look at ech class individualy. so you can know 5 cantrips and 9 spells up to level 4 for sorcerer and 1+CHA modifier level 1 spells for paladin.
although you can't select a 5th level spell you can still use the spellslot to upcast a lower level spel.
Sorcerer 4/Fighter 3. So that should be 5th level spellcaster, with access to 3rd level spell slots. Only slots up to 2nd level show in character sheet. https://www.dndbeyond.com/characters/98149810

You're a rune knight; they don't get any normal spellcasting. Only eldritch knight would be counted toward your caster level.
