I support this idea. Don't know if they've put it in the pipeline yet. Simply hiding the ones you don't use is very good for me. Also custom weapons/armour proficiencies would be nice as well to go along with added custom tool's and languages.
For me this is for homebrew reasons and people picking backgrounds where they might not have learnt the races languages. I.e. A dwarf solely raised by Elves might not actually have ever learnt to speak Dwarvish so I'd want to remove the language they learn in instead of having to make a whole homebrew race for Dwarf raised by Elves. This method doesn't work with the class parts though as there's no way to make homebrew classes for these edits.
Well, if you have access to Tasha's Cauldron of Everything, then you're in luck! You can enable Customize Your Origin in your character's Preferences, and then in Race, pick the Origin Manager tab, and change what racial traits you want to replace. Then go back to Racial Traits tab to change what your proficiencies are.

I created a magician Bard and wish i could remove the musical instrument proficiencies. Adding the playing card set was easy. Not sure why this hasnt been implemented yet.
I'm playing a halfling fighter/barbarian with the unarmed fighting style. He grew up boxing and wrestling in the pig pit at the family farm and has no idea how to wear armor or use a weapon so he has no weapon or armor proficiencies, but I can't remove them from my character sheet. He has one level of barbarian for the unarmored defense ability, and my DM is letting me treat gloves as a melee weapon solely for the purpose of keeping the barbarian's rage ability from being a wasted class feature as an unarmed fighter. I guess since I have no armor and weapon proficiencies at all I can just pretend like that section of my character sheet is empty, but the autistic part of me is very perturbed that there is inaccurate data on my character sheet that I can't fix.
support here as well. The design theory seems to be that if everybody can do everything than everybody's special when in reality it is the LIMITATION that makes characters special.
I also support this request for various reasons, but personally: in my campaign the half orc character with a single dad who grew up among humans as well as the abandoned orphan dwarf who was raised by a gnome family have NO ability to speak their parents' languages just by blood relation. It needs to make sense from their backstory, yes I cannot delete it.
I also support this request - i.e our DM let me swap out heavy armor prof from cleric life domain for a couple of martial weapons profs... I'd like to delete the heavy armor prof, since i don't have it.
The custom ability to add proficiencies is fine, that's how ill add the weapons, but i want to remove the armor.
I support this request - My bard uses daggers and not crossbows which would have been much harder to smuggle around. Adding the dagger proficiency is cumbersome enough, but I should be able to remove those proficiencies that don't fit my character arc
