I'm trying to make a cleric that can switch between different divine domain spell lists each long rest. Ex: At level five, the cleric would gain revivify under one option and vampiric touch under another.
Problem is, I don't know how to make a switchable table for divine spells. I can make one complete list of all included spells, but not one that only gives some spells not all that you can switch.
You can't do that with the current toolset. What I'd suggest is making two versions of the homebrew class, and when the player long rests, they go into character edit mode and switch their subclass.

Sure you can do that. Set up each available choice as an Option, and then inside give it the spells relevant to that choice.
