One of my current characters is a level 5 tiefling college of cuisine bard (Helinia's Guide to Monster Hunting). This 3rd party partnered subclass got dagger for starting weapon, but proficiency in simple weapons. An equipped dagger appears to follow the rule with +5 to hit. Other simple weapons (handaxe, sickle, etc.) only show up with +3 to hit when equipped. Am I missing anything? Should this be reported to support or just override to get requisite number?

We'd have to see the character to be sure, but probably what's going on here is nothing to do with proficiency or simple weapons at all.
Rather, it's that daggers have the Finesse property (meaning you can use either Strength or Dexterity for attack and damage rolls) while the other melee weapons you've mentioned do not (meaning you can only use Strength with them). If your character's Dexterity is higher than their Strength, then their attack modifier with the dagger will be higher than with a handaxe or sickle, as with Finesse weapons D&D Beyond automatically uses the higher of the two modifiers.

It would be nice if it told you how it calculated that number on the sheet — it does this for Armor Class, for instance, if you click on it — but that's not something they've ever implemented, unfortunately.
