It's super easy. On the character sheet view just click on the small gear at the bottom of the skills list. That should open up the list in one of the side panels. You can then click on the custom skill dropdown, then the add skill button. Finally click on the new "custom skill 1" and there will be an option to edit it. You can add whether or not you are proficient, what stat you want to use potential magic bonuses, etc.
As a DM I've found it helpful to suggest my players add common skill/ability checks (like your barbarian who wants to use STR to intimidate, rather than CHA) that aren't the default ones to the list, so that we can avoid the extra "What do I add again" questions.

How do you mean? Thieves tools allow you to add your proficiency modifier to Dexterity checks when picking locks. They're not a skill.
You can always add a custom skill to the character sheet if you want a reminder.
