My request is to be able to do it from the homebrew creations side, so that the player using it doesn't need to manually add the note themselves from the character sheet
The reason I'm making this request is because I cannot override the notes already present on an item, I can only add new things onto the notes in the character sheet.
As far old as this is, I to would find this helpful (both as DM and player). As a player it's already there, as a DM it's one less thing I would have to possibly explain. Yes, I get the description argument, but an "at a glance" note does wonders.
Also wanted to bump this, I have some homebrew items for firearms for the gunslinger subclass. It would be nice to see "Sight mod" in the notes section without my players having to add it themselves every time.
In my situation, I created gun mods where you can only have 1 of each type of mod on a firearm, Barrel mod, Barrel Attachment Mod. Under-Barrel mod, and Sight mod. I have a really neat way to organize it by adding a backpack and changing it to the name of the firearm, then adding the firearm and all the mods into it. This lets you equip the entire gun system by equipping or unequipping the "backpack." Adding in custom notes with the 4 types of mods would make it easy to keep track of what mod slots you have left and which ones are used.
I'm sure there are other less niche situations where custom notes would be very helpful as well.

I would like to be able to customise notes for Magic Items and Actions given as a part of features.
Yes, i know they can be edited in the character sheet, but i would like something a little more concrete for things like custom properties.
If you want to add custom properties, for items just quick-copy them as homebrew. For actions, you can add a custom action.

I know I can make custom actions, I'm asking to be able to edit the 'Notes' for those custom actions.
I'm not sure what issue you're running into, I was able to add notes

The notes are for the player. All your information should be in description.
