Actual split of levels between the two classes (unless you meant Arcane Archer (fighter)8/Assassin (rogue)8, which would make you a lvl 16 character.
Also the actual attack(s) performed to get that max and that average (weapon type/bonuses included) could be useful to give you a better opinion. (I gather from your second post that you mean that amount of damage in one turn, not just one attack)
Still I have to admit it seems like it's A LOT, and something might be off.

While we wait for more info, I did some math and I think you might be calculating something wrong.
Considering you are using a longbow (1d8), any damaging arcane shot (they all do 2d6 max) and are lvl 4 Assassin (2d6 sneak attack), the grand total of 4 crits (with the first one having both arcane shot and sneak attack [both can only be used once per round]) comes up to 112 maxed.
Now, you either are lvl 16 (for which I did not do the math, but in that case it might just work) or have a +132 damage given by your Dex and the weapon you are using (unlikely), or I believe there's something incorrect in your calculations.
Edit: even if we consider feats like sharpshooter, so adding a flat 40 to the total (this damage does not get doubled by the crits), you would still need +92 to damage coming from somewhere, and you could have at best +20 from a DEX 20, and a max of +12 from a +3 longbow (+3 is I believe the max in this edition), which sums up to a +32, still leaving out 60 damage not accounted for.
Eeeven considering maybe Hunter's Mark, that's still only another 24 damage, so still 36 damage unaccounted for.

The critical hit from Assasinate doubled only the dice, not the fixed damage. Moreover, sneak attack and arcane shot are valid only once per turn. They can't be used with Action surge, in your example.
Action Surge does not allow you to use Arcane Shot or Sneak Attack again. Its the same turn with two actions in it.
So, four attacks. In an ideal situation, you can deal up to 1d10 x 4 + 2d6 sneak attack + 2d6 arcane arrow + 40 + 4d4 poison + DEXx4. If you manage to surprise someone first round and no save made, that's 8d10+8d6+8d4+52 = 44+28+20+52= 144 average damage.
However, that's a very unrealistic. Most likely, that poison will be resisted, you'll miss at least one of those shots due to that -3 penalty, even with advantage and archery fighting style. Assuming you have time to apply poison at all. More likely, you'll be dealing 6d10+8d6+39 on the first round, or 93 damage on average. After that first turn, your damage falls - Arcane Shot is twice per short rest, and there's generally two battles per short rest, so one Arcane Shot per combat. You used up your Action Surge as well. So, your damage, if you can arrange for sneak attack and don't miss, is now just 2d10+2d6+16 = 11+7+26=44 damage in a turn.
You will not be able to hit every attack, and you won't always get to use Assassinate. So, while that initial 144 damage looks like a lot, its very unlikely you will get the ideal conditions to reach that high.
You are confusing ROUND with TURN. A round is made up of everyone's turns in order. Then, once everyone has had a turn, the round ends and you start again.
You get sneak attack once per turn, and you can take a Reaction on someone else's Turn. Action Surge gives you another Action on the same turn. Opportunity Attacks always happen on someone else's turn, because they're making movements, or whatever. That's how you get sneak attack once per turn.
I suppose, in theory, you could Ready an Action using one of your Actions, then use your reaction to sneak attack again, but I find it unlikely you'll get a triggering action during a surprise attack.
It COULD be indeed a good amount of burst damage for a lvl8 character, but both are quite unlikely to happen, as many coincidence need to happen (all attacks must hit, for starters, which is not a given even with advantage to all of them).
A side question, though, why so concerned by this? (Only curiosity, honest)

i have a fighter/assassin lvl 8, i'm dealing a max of 244 of damage and an average of 152, is this a good damage?
No, it's terrible damage.
It's also not possible.
what makes it not possible?, just a simple assassinate with action surge and arcane shots build

If you manage to land a surprise attack, yes. Just don't expect to be able to do that consistently.
