Not with average, everyday mirrors, but If the beholder used special mirrors it could shoot its rays around corners. As a consequence, though, clever intruders could reposition the mirrors to shoot rays back at the beholder! The beholder would develop a defense against such billiard-ball bouncing ray reflection, but in its arrogance it might get caught off-guard the first time.
I was always wondering if some DM's let rings and some other magic items change size a significant amount in order to fit odd sized creatures. We normally only let magic items change enough to fit small to large beings. Tiny and huge would be out of the range.
And would the eye stalk be small enough to fit a ring?
There's a magic breastplate in Storm King's Thunder that resizes from Huge to Medium. And the description of Xanathar in Dragon Heist includes a particular magic ring and states that the beholder can activate it.

I was more talking about the normal magic we find in the PHB and DMG.

And really those are just two specific examples.
I mean, you asked about specific DMs. Players picking up the loot the monster was using against them is one of my favorite things, so for me, it's an absolute yes. My point though was that I don't think the limitation you mentioned is a real one, I think it's purely imagined.

Per the DMG, they just fit:
In most cases, a magic item that’s meant to be worn can fit a creature regardless of size or build. Many magic garments are made to be easily adjustable, or they magically adjust themselves to the wearer.
Though, a little further down, it points out an exception that’s relevant here:
When a nonhumanoid tries to wear an item, use your discretion as to whether the item functions as intended. A ring placed on a tentacle might work, but a yuan-ti with a snakelike tail instead of legs has no way to wear magic boots.
They would ADORE their own reflection. They are self obsessed and consumed by this. And highly intelligent. I think it would bring joy to its heart rather than trigger some canine reaction.

Also i think their ego is higher than their wis and int combined.

There is a picture of a beholder somewhere (from dnd) that is covered with jewelry, including rings. Which makes me think that it could.

I am a jerk. I literally had a Beholder NPC who had a mirror to stare at itself, believing it to be the most perfect, superior being in existence.
