I was debating on Homebrewing a Spell from 2e, but it has a casting time longer than 1 Action, but shorter than 1 Min.
So, I was wondering how this would work in the current system...
If the Spell has a casting time of 2 Actions, I assume that on the first round of combat, the caster would identify the spell they want to cast, and use their first action to start casting it, then in the second round of combat, they use their second action to finish casting the spell?
Have any of you dealt with anything like this?

While you cast a spell with a casting time of 1 minute or more, you must take the Magic action on each of your turns, and you must maintain Concentration (see the Rules Glossary) while you do so. If your Concentration is broken, the spell fails, but you don’t expend a spell slot. I’d just change that from “1 minute or more” to “more than 1 action”.
You could just specify it being X actions, given that 1 action ~ 6 seconds. Say it takes 30 seconds to cast, say it has a casting time of 5 actions. Then do what Spam suggests and apply the longer casting time rule
I tried something like this in the past and how i did it was "First round consumes Action, Bonus action and Reaction. Spell then activates at any point on your next turn with an action" but it was a little cumbersome to those used to 5E only. I also worded it poorly.
When adapting things from older materials I tend to go with the flavor and Vibes and mechanics closest to what fits in 5E. There are some older spells that are very potent in older editions that are balanced by their clumsy casting restrictions. I just can think of any right now.

Depending on what the spell's effect is, you could also do something along the lines of delayed blast fireball, where the official casting time is still only 1 Action, but holding concentration on it (or holding concentration and using a Magic Action) on subsequent turns increases its potency
