Tasha's Cauldron of Everything for sure. I also have this sourcebook in physical form and it's a great extension to your character classes. With extra spells, class features, magical weapons, and some handy DM tools in the back, this is my favorite book.
Everything I have purchased so far has been great, but I think I have gotten the most inspiration from Volo's Guide to Monsters. The group I DM for are all pretty well read when it comes to fantasy and science fiction, so going in depth with some unique monsters has been a great way to liven up our sessions. We haven't gotten to it yet, but I am planning a whole arc based on trying to stop a horde of Gnolls from sweeping the countryside and bringing Yeenoghu to the Material Plane.
My players would probably say that Tasha's Cauldron and Xanathar's Guide are the best, and it is hard to disagree with them because of all of the amazing player options. That being said, I've had the most fun listening to Volo share his knowledge on monsters.
For me, Tasha’s Cauldron of Everything is now my go to. I couldn’t live without it. optional class features, new subclasses. It’s amazing. A great add on tool to Player’s Handbook.
Tough since I see the MM, PHB and DM as the basics I would definitely vote for Xanathars Guide. It has a nice combination of tools for players, DM's in good balance.
Also it features Sylgar on the front, what's not too love?
I'd have to say Elemental Evil. Being free is HUGE as it allows ALL players access and isn't limiting those low on funds at a given time. That level of inclusion can't be overlooked for value. Obviously the PHB is a must have, but that just brings us TO the game. To me, EE enhances the game without deflating my wallet and does so with a LOT of really cool new stuff. Hard to top, even counting all the other good books posted by others (Volo's is nice, Xnathars is great, Tasha's is to me, at least, a little "meh" as it scratches out a lot of core rules to allow freedom.

In my humble Opinion "Xanathar's Guide to Everything" did everything right. As u would Imagine by a Beholder of his Caliber he fixes alot of Mechanics, Subclasses and other tits n' tats for me.
But maybe i just got hit by his "Charm Ray" who knows.
As a fairly newbie GM, I can't see any DnD experience without Tasha's Guide to Everything going forward. It addresses quite a number of issues, adds tons of new options for classes, and finally helps deal with smaller parties by including the companion options. It's got... uh... ALL-THE-ESSENTIALS to adapt the game for players of all kinds? Yeah! THAT!
Xanathars Guide is the key that opens some very important and interesting doors including exciting character options and helpful DM tools. This is a great buy after the core books.
I really love Xanathar's Guide to Everything, the lore for downtime and the activities suggested really help DM in a large city like waterdeep. Also, the subclasses introduced are some of my favorite.
Everytime I need to use rules for crafting, or suggest a great subclass for a new player, I inevitably turn to Xanathar's. I also appreciate the list of names (Greek, Egyptian, etc.) at the end which I use in my homebrew campaigns! Can't praise Xanathar's enough. ALL-THE-ESSENTIALS!
I will admit that Tasha's Cauldron of Everything is a very close call over XGTE. I pretty much always end up with a subclass out of Xanathars and always need to change stats round to make the species work with that class. Has to be said though I use a random roll to select races so I dont keep going Aasimar or Elf. Ps Why does Gleam.io always assume peoples twitter accounts are throwaway even though its our only account and we dont spam it?
