One of my players would like a Goliath sidekick. I have no problem with it. But, the rules indicate that you need to start with the creature's stat block, and that it should be CR 1/2 or lower.
I'm thinking that a baseline PC race should be able to fit into that CR, but I can't seem to find a stat block for anything other than Goliath Warrior and Goliath Werebear.
I would suggest using something like the guard or tribal warrior stat block, which doesn't specify any particular humanoid race, and adding the racial abilities of the goliath onto one of those (i.e., Stone Endurance, Powerful Build, Mountain Born, etc.). This alteration is what you'd potentially do to make something like a standard goliath guard NPC, so I'd just do that and build the sidekick details on top of that.
Similarly, if you wanted a tougher goliath sidekick, you could do the same thing above but with the thug stat block instead.
