Yes, the Rakshasa was the only one that sprang to mind. Are there more?
Tiamat has the same as the Rakshasa. There are also a small number of monsters that have a more limited immunity, such as the Swarm of Gremishkas. It's not at all a common thing in 5e, though.

Thanks. Unfortunately, Tiamat and Gremishkas are behind paywalls for stuff I don't own or intent to buy soon. I'll just use the Rakshasa's ability for my template.

Should 6th level or lower mean all spells cast from 6th level or lower slot? Or it is all-encompassing for every spell on a spell list displayed as 6th level or lower?

The latter. Even if you cast a 1st level spell with a 9th level spell slot, it doesn't change the fact that you're casting a 1st level spell.

Are you sure? Using the magical energy of a 9th level spell to cast Meteor Swarm, on him should use the same amount of magical energy as up casting Fireball to 9th level, and hence should be able to over power his immunity.
Perhaps a related question would be: Does allowing the upcasting of a spell below 7th level to affect a creature having a Rakshasa-like spell immunity become unbalancing? In some way? Let's keep in mind that some of the more powerful spells below 7th level include the following:

Most of those aren’t as good as 6th level spells but it requires the same resources, hence, it should bypass the Rakshasa’s immunity, simply because of power/resource management (still good spells tho :)

Are there any monsters that have an ability similar to Globe of Invulnerability but that do not require casting a spell?
I cannot think of way to directly search for that using DDB.

Answer unclear. The rules for casting a spell at a higher level indicate that it becomes higher level; globe of invulnerability specifically states that upcasting has no effect, but the monster ability does not.
