You can always give him acid immunity yourself. DMs can do that, if it seems appropriate to the monster. Statblocks can be thought of as a template, not the end-state of the monster.

I like the idea that you can't really be sure exactly what Juiblex is made of so saying he is made of acid isn't compelling to me. That said they did make him immune to acid now.
I personally don't really care because for me his regeneration is more important. It's maybe not intended but I like to use him like a grey goo scenario where his lair continuously expands consuming the landscape with the Juiblex block stat block acting as the portal/ anchor point. In that kind of story the challenge is stop him growing back.

Juiblex is the lord of slimes and he has no damage adjustments to acid damage even though:
