Hello! I'll be running my wife through Princes of the Apocalypse, but she'll only be playing 2 characters: an Elven Druid and a Half-Elf Paladin. I'm going to make them 3rd level to start, so that will be a help, but there's still gaps.
I need a few magic items to help cover the roles of other character classes and I'd like suggestions for appropriate magic items.

Well, it's up to you of course, but what I would recommend is giving the party face either the Helm of Comprehending Languages (or a home-brewed one to lesser effects), and maybe a scroll or spell with a one time defensive use.
Alternatively, if you want to be generous give them 1d4 magic items in the Magic Item Table B.
Give the Paladin a warhammer that can act as a Sword of Dancing for up to a minute and the Druid a faerie dragon as an animal companion (presto one - slightly crazy - magic user). Maybe let the dragon have some thief-like skills.
Otherwise, I would just whip up a pair of NPC's to fill in the holes.

I do not like the word... prisoner. It implies a helpless state, and I assure you, I am never helpless.
A shield guardian might be appropriate here. It would provide a dependable tank to protect the druid while the paladin dealt with the front line, or vice versa.
II second this, perhaps a rusty old shield guardian (maybe remove the regeneration or damage absorbing abilities so its not totally invincible at low levels) to give the party a reliable tank and give the characters a little bit of a buffer in difficult encounters. I have used this is a campaign that I am running with my wife playing a single PC and it is working very well.

It wouldn't really be necessary give them any magic items. Nothing is so much of a threat that magic items are needed to defeat them.
That way, when she does find something, it's pretty special.
