Out of curiosity. What level would you consider letting players have a wyvern for a mount or companion. There's a wyvernling and a reduced threat wyvern floating around as well to consider.
That depends entirely on how are you ready to deal with consequences of having a Wyvern on the group.I don´t think there´s a rule about it. I could suggest when the CR of the creature is half of the players level, but it really up to you as a DM.
A reduced threat wyvern might be used earlier (~level 9), but a wyvern is a pretty tough mount that should be saved till late game (level 13+) (plus they are notoriously difficult to tame).
The issue you are most likely to have is with giving players access to its venom.
Yeah, a wyvern is a pretty tough beastie and would be quite difficult to tame.
You could use a reduced-threat Wyvern, but I still can't imagine one would be easily tamed either. Maybe have them find one from an egg or something and have them raise it from childhood to adulthood. That way they need to work towards it, and feel accomplished once they get there? That's just my two cents.

If you want to give it to them but want to balance it out a bit, make it impossible to fully tame so it will occasionally (%chance or badly failed animal handling) try to attack noncombatants if you take it into a populated area. Also, they're rather large and will slow the group down if they're in an area where flying is impractical. Even where it is practical, carrying more than two people is a stretch unless they're carrying less than the average adventurer, and even then, any after the first two will probably have to be carried rather than riding it.
