I have yet to run a game at a con, however I have a few friends who've had the honor. I've heard tales of groups ranging from 6-10 players depending on the size of the con. Almost everyone I've heard tales from says they had a blast, but that it requires being pretty much on your A game. It's also exhausting as you're going for longer than the average 4 hour game and your players may change a few times. The upside is that you don't have to go through character generation each time, just pick up and go. As I said, I'm just reciting what I've heard so your experience may be vastly different.
I have run at conventions in Utah and the tables we keep are max of 7 but we do run epics that cover 20+ tables at the 7 players per table for 4 hours. This can be draining but is also a lot of fun to see people that are new or experienced playing in one shots.
For DMs who've run convention one shots before, what is the highest # of PCs you've had at your table at a time? How'd that go?
