I had a lot of fun running it this way! Strixhaven is one of those books that isn't really ready to run right off the shelf, but has some good bones on it.
You don't need to! Just rely on the Dungeon Masters' Guild, the portal in which experienced DMs and authors bring their sidequests (and other stuff) for a multitude of campaign settings, including Strixhaven!
"Yes but I am a new dm so I do not have the knowing to create side quests that fit in to the campaign from scratch"
Check your players background, and such, to see if they have something they want to do.
If they have a bit that says "find the one armed man who murdered my wife", figure out some clues that lead to the killer.
If they want to build/craft some magic item, figure out a list of items needed to build that thing, when they start doing research have them make an arcana check, and when they roll above a 15, give them the list. Then fugure out where they can find these things. Dont make the components be sometjing that forces them to do something evil. And then put those things around the campaign.
Do they want to help animals? Give them animals to rescue.
Look at what the players want to do and find ways for them to earn that.

You could also look through the card gallery for the Strixhaven magic set for some ideas. They're actually releasing another set for Strixhaven this year too, so looking through the previews their can also add some extra options.
