Create scenarios (non combat) that can turn the combat tide in their favor.
ex: hideout is always guarded by X people. give ways for players to find out that, and see if they can come up with a method to reduce X outside of the combat.
Another ex: informant NPCs with helpful information, for some coin, that can help them prepare for what’s to come a little better.
another ex: weather and terrain. Give players chances to use it mode to their advantage for stealth/cover/whatever. (Yes it’s a two way street, but depending on intelligence of thing in encounter could definitely favor players).
I would adjust the monsters' health to be lower than average. Not minimum, because 4-7 with a group of 3 means they're only slightly underpowered. You might decide that there is one fewer enemies in encounters than written instead.

Hello. i am a fairly new DM, and i need a little help on how to change the quest. Here are things that I have tried:
