I'm planning on starting to run Saltmarsh soon (fairly experienced DM), and the first encounter of the game (running as written) is with a bunch of Giant Weasels.
I dunno why, but that just kinda rubs me the wrong way. I'm fine with using the stats, but I've decided to reskin them. Problem is, I can't think of anything.
Any suggestions?

They live in an overgrown flower garden, they are perfectly fine as an encounter for 1st level characters. Not sure what the issues with, the house also has giant centipedes and spiders along with snakes I think in the well, from memory.
Describe them in a menacing way. A standard size weasel might look cute, but has a vicious bite. Describing them as four feet long with gaping jaws containing 6 inch incisors and bounding across the ground VERY quickly might make them less "cute" to your party.
Four foot long since Giant Weasels are MEDIUM size. Their 40 ft movement is probably faster than the party, also making them more fearsome.

Ya know, that's a great question.
I think it's probably the fact that giant weasels are, well, giant weasels, which feels a bit too comical for my D&D tastes.

I don't have the adventure myself but... why not swap them out for wolves or something?

From when I played they come out of a Bush. Maybe some other Bush animal. Use the same stat block but a say it is a bush predator.
(Cant think of any bush predators but there is bound to be some in the wild]

I think, it is really depending on the picture you have in your mind.

Just to add to the above, a mongoose is pretty much a large weasel.
Now imagine if that thing was the size of the lion?
