I'm pretty much a novice DM - just running my first game for roundabout thirty sessions now - and I'm currently struggling with setting up things for my players to do at a gathering of a Witch Circle which they had shown interest attending for quite a while now. While I have things planned for the event, at their current pace they are looking to arrive there almost a week early. So, I'd like any suggestions and ideas.

Well what is a Witch Circle and for what purpose is it taking place? Sounds to me like some sort of magical ritual or something.
Perhaps they are short on supplies or someone that is bringing something important who should have been there by now hasn’t shown up (they died on the journey there), and the party has to go on a little side quest to obtain some hard-to-acquire components before the actual event takes place.
What kind of gathering will best fit your plot? Is the circle good or bad or neither? Are the PCs just observing out of curiosity or are they spying on it for information or do they hope to join or what?
Depending on which way you go, you might have it be a holiday/celebration. In D&D it’s easy to have everything be about stopping the BBEG, but sometimes it’s nice to give the characters a day off to just cut loose with some friends. It can allow for some good rp and character development.
