They know that they are playing LMOP. They have decided to abandon doing that, which is an act of aggression against the DM, and is an attempt to wrest control.
You will spend/waste your time trying to work out how they can set up their zombie rental business. As soon as you have (putting aside that there is nothing fun to do about playing through the daily business of running a temping agency) your players will decide that since you are on board with it, it's no longer fun and they want to do something else. Your work in implementing it will be for nothing. The players just want to show how free they are not to have to follow your prepared ideas. They are getting pleasure from knowing you have nothing prepared for their ideas; they want to see you struggling to follow along, not engaging with it.
In short, find a new group who actually want to play D&D.
