hi all, a giant wasp stings a pc, im confused on this wording. If the poison damage reduces the target to 0 hit points, the target is stable but poisoned for 1 hour, even after regaining hit points, and is paralyzed while poisoned in this way

so this means i dont roll death saves as im stable and even if given hp im still paralyzed and at disadvantage on saves etc if something else attacked me ?

Correct.  The poison cannot kill a character, as the character auto-stabilizes with the additional effects.   Other sources of damage can.

I think the idea is for the wasp to carry the poisoned creature away to be used as food for its larvae, aka baby wasps.  Imagine being eaten alive.  Yumm.
