I always use a pencil on graph paper, because that way you have an easy key and you can erase something if you change your mind about it. For combat I would suggest laminating a piece of squared paper and then when initiative is rolled drawing on the surroundings with a whiteboard marker. This works because it means that you can reuse the laminated paper each time and also its quick and easy. Your artistic skills dont have to be good either, because it's usually just going to be lines.
