I think the provided guidance in DnD Beyond has been to treat NPCs as monsters. If so, how do most DMs on here track their NPC's resources, spell slots, HP (from one encounter to another), etc... Looking for ideas and better ways to manage NPCs.
If they are companions to the PC party, then have one your players take ownership of the NPC during combat encounters and assist with playing them during explorative: i.e. you make decisions for the NPC but the player is responsible for updating the sheet and tracking use of resources.
Most of the time, there's no need to, unless they're accompanying and fighting alongside the PCs. (In which case, build them as a character.)
But most of the time, you don't want to have NPCs fighting alongside the players. It both potentially steals their thunder, and also gives you even more to keep track of.
