I've got a party of 6, with Hekaton and 4 other storm giants heading in, and Harshnag as well (he's too cherished by my party, I have to bring him back or they'll never let me live it down). With that in mind, it feels like just Iymrith on her own won't be enough to actually be a dramatic final boss.
I could just buff her hitpoints or add new lair actions/attacks, but Iymrith will still be outnumbered TWELVE TO ONE. I think adding her two children, found in chapter 3 of SKT, would make things more interesting. But is that too much? Our group just lost our healer (he had to move, and that damn kraken got his character- RIP Aluiscious) and I don't want to over-do it.
What do yall think? I'm not experienced enough to run the numbers and figure out if they're just going to melt her... but the plan (if yall think it's a good idea) is for all three dragons to be outdoors, then she flees into the lair at lower health and the children remain up top. If the characters are insistent on pursuing Iymrith, the giants, sans Harshnag, will stay up top. H-dog will follow the party below for the final battle.
I run SKT on a PbP thread on here, I can tell you that a party of 6 with 6 giants is too easy against only a dragon, considering that 5 of those giants are already immune to the dragon's breath weapon. Well, it also depends on whether or not your players have access to the potion of giant size.

Adding Iymrith's offspring to the battle will ensure a more fair encounter. If for the story, you do not want to risk her children, you could add air elementals, air elemental myrmidons, earth elementals or earth elemental myrmidons. Those elemental fits thematically as Iymrith's minions.
