EDIT: This one as well from the Dm's guild itself (these adventures are on the previous list as well, but a bit buried, maybe). These are old 1-on-1 adventures for 2nd edition, but I think they can be easily converted for 5th edition. The neat thing about them, I think, is the fact that each one is designed and tailored for one character of a specific class (the "basic 4", Fighter, Wizard, Rogue, Cleric). I have not tried them out myself, but they sure seem interesting so I might give them a go as well :P
So I chose npc players but instead of making full characters why don't you just use monster stats. There are creature stats for guards, commoners theifs and many more humanoid guys. Run them like regular monsters in battle and if you don't feel like ridiculous backstory you can always just make them hirelings.
If it’s an introductory 1-shot then I would let the PC be level 3-4 perhaps even 5 if you want to let them have some really cool abilities - with the risk of making it overwhelming. Level 1-2 is a little boring to play and to easy to go wrong. Level 3 let’s him have some cool abilities and enough hp to last more then one round
If he likes it then you can restart a real campaign at level 1.
My son had a wonderful time with the oneshot I had got ready by his birthday. Such a good time in fact that I sent him home with a set of books so that he could play with his cousins.
It just so happened that two weeks before he was due to be up, the game I was playing in unexpectedly ended (we had a house rule that if you Crited you could roll again and if it came up 20 again you rolled a third time, and as long as that was over 10 it was an autokil) when we "accidentally" killed the main boss of the whole campaign (which the DM thought was going to go at least another 6mo). So the group talked me into DMing the next campaign for them which I have just morphed out of the oneshot.
Scarylicious fun! We finished the oneshot's material last game and now I'm just making sh!t up.
I think I've caught the DM bug, this is the most fun I've had in.... Ever!
planning on introducing my son to D&D for his 15th Birthday. But it will just be the two of us.
Should I alter a one shot for single player (up his lvl, down play challenges) or are there One Shots out there for single player games?
I could probably NPC some party members for him, but this will be my first time DM... so trying to not over extend myself.
I have been interested in 1-on-1 adventures myself, albeit never tried one..
This link might be of help :)

Born in Italy, moved a bunch, living in Spain, my heart always belonged to Roleplaying Games
Those are very helpful links! Thank you!

Thanks for the follow-up! That's great to hear that everyone had a good time.
