If you recognize the characters Aatxegorri, Faheem, Galgadayle, etc stop reading here.
I am running an Out of the Abyss campaign, allowing my players to use Forgotten Realms/5e material, including Unearthed Arcana.
So my players fought a duergar vampire, during the fight our minotaur Hexblade was bitten by the vampire twice. The minotaur gave the killing blow and as part of the action he took the vampire by the hair, pulled him up, and ripped his throat out with his teeth, drinking the blood.
We'd actually had discussions about fighting vampires, as they knew that the BBEG was one well before hand, and the actions were completely in keeping with our brutal minotaur's fighting style. He's cannibalistic and brutal, without dipping into the "Ooh look at me I'm edgy."
In classic style vampires, this could make the minotaur a vampire now. In 5e/Faerun the player needs to be reduced to 0 HP, raised as a vampire spawn, and then have the blood of a full vampire.
I'm not sure where to rule on it. Rule of cool, I'm ok with the player becoming a vampire. I could make it work in the campaign, but I'm also ok with him not becoming a vampire.
I did rule that the player received a madness curse from Orcus for drinking the blood. Is there any other consequence I could give?
To stick closer to the rules (and for some surprise fun factor), I might wait until the character dies, then have him resurrect as a vampire the next night.
Trying to put myself in the players shoes, I’d simply just pull that player aside ahead of time and see what they’d want to do since you’re in a willing position to go either way. The last thing you’d want is to turn your player into a vampire, when he didn’t really understand that’s how it could work or something, and now they’re upset playing that character. Vice-versa, maybe they knew exactly what they thought they were doing, really want to become a vampire, and would be upset if their plan to become one didn’t work. The game is about having fun and everyone being happy with the choices and outcomes, so don’t hesititate to include the players in making choices, especially those that could drastically alter how they play their character. Hope this helps!
I second what Lyrak said, this is a decision I would leave up to the player.
Another thing to consider is the alignment of the character post Vamprism. According to the Monster Manual, his alignment shifts to Lawful Evil. Are you going to go that route? Is that something the player is OK with?
One interesting scenario would be if the player does go with the alignment shift but does not tell his fellow adventurers, suddenly the goals of the player change to some new nefarious end. Just some food for thought.

Just looking for some advice.
