There's some really good stuff in here. Hopefully I can implement at least half of it!
The other players haven't complained about the Barbarian at all. They're all into RP, and I include a lot of that, and character/storyline development, which they're right into. It's just that the player with the barbarian is a really good guy who cares a lot about other peoples fun. It's a good problem to have. And I'm going to be making every effort to make combat more varied and challenging and involving for all so that he feels better about things.

In my group we rotate the DMing duty every once in a while and start again at L1, maybe you have hit this point.
This may be fortuitous timing, but Matt Colville just released a video on Tactics and Strategy.
This could tie into my suggestion about mixing up opponent types, and how to integrate their tactics.
