I've run a couple one-time sessions with 2 PCs using the first 2 chapters from LMoP and the players really surprised me with how well they handled it. I would suggest having them roll "tougher" classes, like Fighter/Paladin/Cleric/Monk (maybe Ranger), and just be mindful of the number of enemies you throw at your players.

Yeah, reduce the number of enemies in a given encounter. If the plot allows, skip the bugbear fight (and anything like it) entirely.
