I cannot for the life of me figure out how to create and add homebrew weapons or armor... Is there no way, is it not allowed for some reason, I'm so confused by the lack of this feature... There's so many possible weapons and gaps in the official weapons that simply fail to provide a weapon that can be reflavored to fit some weapons...
Hover over Creations drop-down menu at the top left of the page, then on the right click on the "Create Magic Item" button.
If you mean mundane weaponry and not magical, there is not. You can simply rename and change the descriptions of items within character sheets if you want to do this.
I'm confused as to how those are useless for you. What is it you're trying to achieve exactly? You can make basically any weapon or armor through the magic item creator, and you can modify any mundane items basically however you want in the character sheet.
There's a way to make any weapon, but it's weird. You start in the Magic Item creator. You choose a weapon with the damage die and range(If thrown or ranged) that you want. You go into modifiers and use "Ignore Weapon Property" for all of the weapon's properties(For example, Versatile if you start with a Longsword). Now it becomes a blank slate. There is at least 1 weapon with every damage die for both ranged and melee(Using Firearms, you actually have more damage die possibilities for ranged weapons than melee weapons), so this should not be much an issue.
Now, you can use "Replace Damage Type" and "Weapon Property" modifiers to make just about anything you can think of. You want a one-handed reach weapon that uses a 1d12 damage die, is finesse and versatile, and deals fire damage? You can do that. (Greataxe base, add Reach, Finesse, Versatile, remove Two-handed, Replace Damage Type: Fire, done.)
The only weirdness now is that it's proficiency will require the base weapon, such as the above Fire-Greataxe-Thing requiring proficiency with the Greataxe, but that's a relatively minor thing, and you can add proficiency to either the "Magic Item" or the character.
And that's how you do it. Hopefully a proper "Mundane weapon creator" will be added at some point, but for now, the above method is what you need to do.

Both those options are useless sadly for my purposes... Seems odd that such an option doesn't exist...

Awesome, thanks!
