Monk in general do not concentrate on things, so the concentration limit is more about it ending if they get hit and fail a concentration check, but then they just have to get hit again to hit them again. To make the concentration worthwhile limit, you need to put in a limit about how many times they can do this
I would limit the item to be usable 1/day if you want 6th level character to get the item and not be overpowered.
Questions:
Does the first hit take the damage? I would rule No, it casts the spell after you get hit.
Does it count as a magical attack? Yes, a 6th level monks attacks always do, but other people may use it. I would rule "yes" it does count as a magical attack.
Does it require attunement? And is it limited to Monk I would rule YES it does to both.
That version of it seems to me to be a rare item, something barely within the power level of a 6th level character. Strong, but not abusive.
If you make it useable more than 1/day, having the Hex apply before the first hit, or does not require attunement, then it would be Over Powered for a 6th level player.

So I'm planning on giving my open hand monk a gauntlet which essentially casts hex on a successful melee hit
Unarmed strike +1d6 (piercing damage)
The monk chooses an ability and the target has disadvantage on ability checks of that ability.
Duration 1 hour. Concentration. Can not be moved to a new target with out a new unarmed strike.
