Mirror Image has a duration of 1 minute and a casting time of two minutes so I don't see how you can have it running constantly during a forced march.
Darkness is a 15' radius sphere cast on an item. I assume you have this item covered because no one else can see in magic dankness and it would be obvious as hell during the day. This also suffers from the same problem as Mirror Image. Every 10 minutes you have to spend 2 minutes recasting it. It's the sort of thing you'd cast once you find your target (if you have time).
Sarah has a bead that she's used in the past that has Darkness on it. She keeps it in her pocket in between. I think she'd be willing to keep updating the darkness as rituals can be done while traveling. If you want me to switch to Hex, though, I will. Sarah's defensive options are just a bit bleak. I agree Mirror Image won't work.

Answering George, Thomas says "Sounds like a plan. Funny enough, I have a feeling they aren't really our enemy. I'm going to use the same trick they pulled and have Gamliel roam ahead for a bit. I'll have to remember that fake land bit, too."
Thomas uses invisibility on his familiar and tells him to scout the enemy ahead and see if the prisoners are really restrained as well as other details.

Invisibility and detect magic are both concentration spells.
As all spells are rituals and don't use spell slots 'concentration' is the only thing that keeps magic under control. The bad guy could bury you in summoned creatures if not limited to one spell at a time.

You reacquire the trail. There is some confusion. You have horses and Longstrider affects a creature so you can cast it on the horses which gives you an advantage in movement speed.

Can Gamliel tell if they are bound or any other indication they are being held against their will?" Sarah asks.

No you can't see the caster HT lasts for 24 hours so there is no need to hang around and sustain it.
