"Are these wyverns going to be able to carry the entire group?" As she says this, Shei changes her appearance to what he looked like in the bar, and imitate Alhorn to the best of his ability. (Would it be possible to try and roll for animal handling but using Charisma instead of Wisdom since I'm mimicking Alhorn? Or would that just be advantage?)
Animal Handling: 11 +5 if charisma, +1 if wisdom, 5 if at advantage. (Also sorry for being super inactive, I just got a new job a couple weeks ago and life's been hectic)
Accepting the harness from Ulric, Alhorn easily gets the second wyvern harnessed up.
Shei
As Shei tries to move in on the third wyvern, he finds that looking like someone is not nearly the same as being that person. He simply has none of the same ability with animals as Alhorn had. The wyvern looks a bit confused, but is in no way allowing Shei to put the harness on them. (No, wyverns would not care that you looked like Alhorn, and no amount of charisma is going to let you know how to act around an animal. You would not smell anything like Alhorn, and the third wyvern is not friendly to Alhorn yet even, so it would not matter to that one what you looked like anyway.)
Germain looks at the wyvern's carefully from a distance, "I'll wait here while you get them saddled, but should we perhaps double up on them? Can they support two?"
Naroth hopefully finished putting on the saddle and then gently but confidently (as much as he can be confident in this situation) and then lower a hand to anyone else who wants to ride with him. "There are only three and hopefully we will not have to travel to far to catch up to the castle, we will have to double up on riders."

Alhorn sees some of the learner's mistakes he remembers making himself when he started out, and tries to help by showing everyone the right way to do it, a bit more demonstrative with the last wyvern
Shei is going to duck out of sight to change into a dwarf-sized version of herself, and adjust anything that needs adjusting. She then steps back out, tucking her jacket into her backpack. “I figured Fletch and I could ride with the two heaviest of you two, and then the remaining two can ride together. That way we don’t overwhelm the wyverns by having the guys in heavy armor ride together.”
Alhorn is too busy for watching, and is looking to get this show on the road. When able, he'll lead the pack up towards the flying city, humming "flight of dragons" to himself.
Germain climbs up behind Alhorn, spreading the heavy weight of his armor away from the other armored folk, and tries not to think too logically about the weight of people and wyverns vs air or the position of the sun vs its appearance.
Naroth holds his hand out to Shei to help them up onto the wyvern, "We should probably get airborne soon, I doubt castle can fly very fast, but having never seen a castle fly, I could be wrong."
As the wyverns are finally harnessed up, Ulric would notice a group of armed men moving through the square outside of the stable. They look to be headed towards the inn, but you have a feeling it won't take them long to realize where you have gone and they will be soon on the way back to the stables.
Wyverns
Naroth and Shei mount one of the wyverns, with Germain and Alhorn climbing onto the second. Fletch has mounted the third, with only Ulric needing to join him. Having spotted the guards out in the courtyard, Ulric runs up and climbs onto the wyvern behind Fletch.
The wyverns are eager to get up and away, so don't take much coaxing to leap airward once the stout stable doors are thrown open. Getting them to go in the direction you want does seem to be a bit of an issue though.
One of you, on each mount, can try for a handle animal check to get the wyvern to go where you want.
I am going to allow rolling with advantage, as I assume your passenger is giving the help action. Naroth, Ulric, and Alhorn can all roll again if you did not roll with advantage the first time.
