“Could be,” Okkar says. “Maybe the Stoneghosts aren’t the only things he’s made, or summoned, since Greedyguts cursed The Knuckle with Glittergloom. You’re right, though, it doesn’t sound like the foes we’ve faced up to now. Can’t assume the same tactics will work.”
This chamber was once a mess hall but it is now simply a mess. The long trestle tables and benches where the dwarves once dined are spread helter-skelter about the space and many lie overturned. Broken crockery and flattened eating utensils are scatted about the floor. The walls here gleam in the darkness, as each bears numer- ous thin, twisting veins of shining gold. Your eyes are drawn away from the blazing gold, however, by a tremendous and sickeningly pale grub-like thing that slithers amongst the furniture, its eyeless face sinuously waving in the dark.
The room is 50 feet horizontal and 30 feet vertical.
The door your entry is from is in the middle of the south wall of the mess hall.
The creature begins in the Northeast corner. It is aware of the parry entering and the party is aware of it, so no surprise or stealth involved, just a straight initiative.
This post has potentially manipulated dice roll results.
Evan:
Unsure if his mace will do anything other than bounce off the giant worm's hide, Evan moves forward, stepping up on any available tables and drawing his silvered spear. The light on his shield bringing the enemy into full view, Evan hopes to puncture it with his attack, and he moves in close enough to both reach it with the spear and attempt to get between it and the other party members, using the high ground if possible.

OOC: If the creature is large-sized, does that mean there are more squares adjacent to it than are shown on the mud map?
If it does, then I'm hoping that this means that Okkar can find an opening that he can fire his crossbow through without risking the melee attackers.
You might like to consider Nanoc's action as Helping Okkar find the opening to give him Advantage with his Piercing attack... Up to you.
If you don't allow this, then Nanoc will hold a Attack ready to defend Okkar if the creature breaks through the ring of enemies around it.

Yes, that is fine with me. The items discovered - or lack thereof - were all the rooms thus far offered. Nothing has been missed.

[OOC: DM, Sorry, but I'm not sure what the above means. Nanoc has offered his 'other' services in the past, but no deal was made and no more was said about it—and in the end they don't seem to have been needed because of Galtheon's proficiency.

To be hopefully be clearer, I was hoping to somehow use Nanoc's Action (by using the Help Action) to give Okkar Advantage with his crossbow, which is a piercing weapon. If that is not possible, then Nanoc will ready the Attack action to defend Okkar in case they are approached by the creature.]

The attack misses, unable to pierce the creatures surprisingly resilient natural armor.
The Ray also seems to simply absurb into the thick, rubbery hide of the monstrosity.
The attack hit, and (assuming it is piercing damage) the monster seems to have no resistance to piercing damage, and takes the full 5 damage.
OOC: I will now tell you that you are targeting an AC of 14.
