Hiya, One of my players has Ensnaring Strike and I'm slightly unsure of the duration of the spell. So, the spell is cast and lasts upto a minute. Within that minute, the next monster he hits is ensnared (pending saving throws) How long does the "ensnarement" last? I assume it's the remainder of the 60 seconds? (Obviously, maintaining concentration and saving throws depending again.)
The creature is restrained "until the spell ends," per the description of ensnaring strike. The duration of the spell is 1 minute, requiring concentration. Therefore, the spell lasts the rest of the minute or until the caster loses concentration, at which point the creature is no longer restrained.
Apparently a vampire's coffin ends up withering away and killing all plants in the surrounding area. With this in mind, as these are the vampire rules I've decided to go with for my campaign, can Ensnaring Strike be used if in the presence of a vampire's coffin, as it requires using tangible but also magical botanical life to trap targets?

The regional effects around a Vampire are optional, not mandated. Specifically it says "The region surrounding a vampire’s lair is warped by the creature’s unnatural presence, creating any of the following effects:" If it had been intended that all of the effects must always be used they would have written "... creating all of the following effects:" or more simply "... creating the following effects:"
So you can pick and choose which effects manifest around your vampire's lair as feels appropriate for your setting.
With respect to the region effect that alters pants it says "Plants within 500 feet of the lair wither, and their stems and branches become twisted and thorny."
This might change how the plants created by spells like Ensnaring Strike look, but I don't see anything to suggest that it would alter how they work.

Yes; unless a spell specifically calls for there to be plants present at the outset, they are just magically formed as a part of the spell.
