Our party will level up likely in the next session, and I can't seem to figure out where to increase max HP permanently (without the max HP modifier) along with leveling up. (This applies to ability score increases later as well, how to increase permanently?)
Also, another question that our sorcerer just messaged me with, does two-weapon fighting apply if one of the "weapons" is a cantrip? (By the way, I said "no", as the cantrip isn't a light melee weapon. But still she's convinced I'm wrong)

You will need to go into the character builder and edit the character, the HP part is under the "2. Class" tab and ability scores are under the "3. Abilities" tab.

A spell is never a "weapon" in the eyes of the rules. Some spells, like Shadow Blade, can create an effect that the caster can use as a weapon but those will say so explicitly in the spell description.
Unsure if this is the answer you're looking for, but when you level up, you roll one of your Hit Dice (or take the average roll) and add your Constitution modifier to the roll. Your HP maximum increases by the total.
Regarding the other question: spells are not weapons, and weapons are not spells. Some spells require you to make an attack roll, but this is not a weapon attack, nor is it an attack using a melee weapon that has the Light property. As fun as it would be, you cannot dual wield spells in 5e (unless you as the GM rule otherwise).
Other questions are already answered, I’ll ad for ability scores, when your character hits the appropriate level, there will be a drop down menu in the class tab. First you choose if you want a feat or an asi, then you choose which feat or asi you want.
