If we're simulating reality: an inexperience fighter could fatally stab someone even more quickly, or knock them unconscious. But that's not how D&D works: Hit-Points are an abstraction for this sort of thing (including strangling).
Just reflavor normal attacks as strangling if desired (possibly starting with a "grapple", so they can't escape, and even a "shove", so they are prone, giving the attacker advantage).
"Knocking a Creature Out: Sometimes an attacker wants to incapacitate a foe, rather than deal a killing blow. When an attacker reduces a creature to 0 hit points with a melee attack, the attacker can knock the creature out. The attacker can make this choice the instant the damage is dealt. The creature falls unconscious and is stable."
