See, physical dimensions are basically what I was thinking. For example, would a dwarf be able to drag a goliath type situation. Both medium size category, but goliath is technically a larger size non-mechanically.

I see. But as we were saying, the rules don't care about a creature's height or weight, just their size (Tiny, Small, Medium, Large, Huge, or Gargantuan).
You are introducing a complication (weight) that doesn’t matter according to the rules. Size category is all that matters in grappling. If you can grapple and move someone according to size rules, then you can. The target’s weight is irrelevant. So all you need to do is remove the complication you added, and everything works just fine.
Additionally, there is no information in the rules about how much any creature in the monster manual (or other sources) weighs. So that part is purely speculation.
Could anyone give some clarity or at least input on the ruling for "Fast Wrestler"? It says:
"You don't have to spend extra movement to move a creature Grappled by you if the creature is your size or smaller."
Is this meant to mean your size category, or your specific size? I assume the former but since it wasn't clarified, I wanted some external input.

As a side note, the new 2024 character sheet (EDIT: the printed one) doesn't include fields for Height and Weight (or Eyes, Hair, and Skin).
Height could be a possible word for the distinction you made in your original post.
