If you're using Fizban's dragonborn and the rules in Tasha's which let you increase the ability scores you want, none of these are bad options! Play the class that interests you most! In this situation, I would play a paladin, not because it's "better" (although some could argue that it could be), but because it's a class I don't have much experience with and seems the most enjoyable for me.
If you are using the original race with the stupid increases, you're best off playing a paladin and second-best playing a fighter. That's all I can really say about that.
